Bottle Gourd(Giya/Loki) Kofta curry


I used here bottle gourd cutlet as a kofta in this recipes as we can make  Bottle gourd Kofta curry by these cutlets.





Ingredients :
For curry
1 Large onion
2 Tomato
2 nos Green chili
1tsp Ginger Garlic paste
1tsp cumin seeds
2tsp Besan (Gram flour)
2tsp curd
1tsp Coriander Powder
1Tsp Garam Masala Powder
1tsp Turmeric powder
1tsp Red chili powder
1tsp kasoori methi(fenugreek leaves)
1Tbsp cilantro finely chopped (for garnishing)
1tbsp oil
1tsp salt or according to taste

For Kofta

Method:
Grind  Onion ,Tomato ,green chili and make a smooth paste and keep it aside.
Beat yogurt and Flour and set aside.

Heat oil in a pan put oil and add cumin seed and let it saute till brown.

Now Add onion tomato paste,ginger garlic paste , coriander powder,turmeric powder,red chili powder,salt ,gram masala ,besan(Gram flour),curd  and fry it 4-5 minutes till it leaves oil .
Now add 1 cup of water and let it come to boil .

Once water  boil, Add kofta/cutlets in it and cover the pan and cook it again for 3-4 minutes.
Remove from heat. Add chopped cilantro in it .

serve with  hot chapati,rice or paranta

Notes-Kofta will absorb the water so put little extra water and cook with kofta only 3-4 minutes. 
so they absorb the masala and gravy. .






Instant Veggie Uttapam





Ingredients
For 2 Medium size uttapam


1 & 1/2 cup sooji (semolina)
1/2 cup sour curd (yougut or you can also use malai)
1Tbsp capsicum (chopped)
1 Tomato
1Tbsp peas
1onion
2 green chili
1tsp salt
1tsp red chili powder
oil for frying


Method:

In a bowl take curd , 1cup of water ,semolina(sooji) ,salt,red chili powder mix it well and make smooth better and leave it for 15 minutes.
Meanwhile cut capsicum,tomato, cilinatro,green chili and keep it aside.
Now heat the tawa (griddle) on low heat and grease it very well
Take 2 spoon of better and swirl it in to thick uttapam .

Now sprinkle all the cut vegetable on the top. Press it on the top softly so all veggie get stick in the uttapam.


Now cook it on low medium heat so uttapam and all veggie get cooked .


You can cover it for 30 second to cook it well.

Turn when it cooke from one side .and cook from another side for  few minutes only.

Note- i cooked it from veggie side only for few minutes if you want you can cook more from veggie side.

Kadi Pakora



This one of my Favorited dish kadi pakora when i getting bored all the veggie and lentils then i made it.
as it changed my taste...


For Pkora 
 1 cup Gram Flour(Besan)
1 tsp salt
1/2 red chili powder
1/2 cumin seed powder
1/2 Baking powder or Eno
water To make a thick paste
oil for frying the Pkora

For Kadi

1Cup sour yogurt(1 glass-matta ,Dahi)
3 Cup water
1/2 cup Gram flour(Besan)
1tsp turmeric powder
1/2 tsp fenugreek seeds
1tsp Grama masla powder
3-4 Dry Red chili
2tsp oil
1tsp salt

For Tadka
4-5 curry leaves
1 onion sliced
1 tsp red chili powder
2 tsp oil

Method
For Pkora

Mix all the ingredients under Pkora section in the bowl except oil .Add water make the thick paste

Make round shape pkora and deep fry them, utill they turn in to  brown crispy pkora.

Now keep it aside

For Kadi

Bled yogurt,in double amount of water.Add Gram flour(Besan),salt,turmeric,gram masala in it.
Make sure there is no lump in it it should look like a butter milk.
Now keep it aside.

For making the kadi ,Add oil in a big open pan .Add fenugreek seed and let it pop.

Now add kadi mixer in it and let it come to boil on medium heat.

Keep stirring the curry, as it will start sticking to the bottom. Keep it on a medium flame first, and let it come to a boil. 
Keep watching it stirring it. After 3-5 boils, lower down the flame to low and let it cook on low flame for 20 minutes and stir in between.
Stir for another 5 minutes and check if its thick enough and looks dark yellow. 
Now add pkora in it and boil agian 3-5 minutes.

For tadka on the top
Take oil  in small pan  ,Add sliced onion ,dry red chili and currey leaves saute it till light brown.
Ans sprinkle it  on the top of the prepared kadi.

Serve it with rice and chapati.

Note  if u  do not want tadka on the top then u can add all the ingredients in the starting time,when you will add fenugreek seeds in the oil.
i added in the last b,coz it gives me nice aroma smell and looks good.

Bottlegourd cutlets (Giya,loki cutlets)

 This is very easy quick, veggie cutlet. yummy snacks to enjoy along with  green chutney or ketchup and hot tea .




Ingredients:

1 cup grated Bottlegourd(giya,loki)
4 Tbsp Gram flour(Add more if u need more for thick paste)
1tsp salt
1tsp red chili powder
1tsp dry roasted cumin seed powder
pinch of Asfotedia
1cup vegetable oil( for fry the cutlets)


Method
Peal and grate the bohttlegorund and mix the gram flour.



Mix all the ingredients together and make a small ball and deep  fry it on  medium high heat .


Fry them until they turn in to crispy brown.
serve it with green cilantro chutney and  hot tea .




Nutty Banana shake

This shake is very  healthy for breakfast .Generally we know that banana have cooling by it's nature sometime it gives us cold, then we can use it by put some nuts and can changes the nature and taste 
 of the  shake.




Ingredients
For 2 people
    2 Banana (medium size)
    1 glass milk
    15-20 Pecans or walnuts
    5 Almond
    sugar as per taste
    few ice cubes

Method

Peal the banana and cut in to cubes. Add milk,walnut and almond and sugar,and  blend it utill it get smooth.
serve in the break fast. enjoy!!

Milk Dalia (Breakfast)




Ingredients

1/2 cup Dalia(cracked wheat)
2 cup milk
4tbsp sugar
1tbsp crushed or sliced coconut
10-15 Raisins or Kismish
5 Almond (coarsely sliced)
pinch of cardamom powder

Method 
In a pressure cooker ,heat ghee and saute the dalia util it turns little brown or you get the aroma  .
Add twice amount of water in pressure cooker and cook it on medium heat, until one whistle. keep it aside
On other side boil the milk .Add cooked dalia and suger in it and stir it for 5 minutes .
Add raisins,coconut in it and stir it again utill dalia mixed well with milk.
For granshing sprinkle almond on the top.  you can serve it warm or if you want cold then put it in to refrigerator for 1 hour and enjoy this meal.


Note . If you do not want to boil the dalia in the pressure cooker then you can directly cooked it with milk after toast it .
To boil the dalia in the milk, take some more milk or mix 1/2 cup of water in the milk.
Cooked it with milk on medium heat and stirr it untill it trun in to thick milk dalia.

Aloo Halwa Fasting

Aloo\Potato Halwa







Ingredients:

4 medium size potato
3 Tbsp Ghee
1/2 cup sugar
For Granshing
7-8 Almond(cut from between)
10 Raisins
Pinch of cardamom powder

Method:
wash and boil the potato on medium heat on two whistle or until they cooked very well  .
 Now peal,  grate or mash them finely.

Take  heavy bottom  pan on medium heat pour ghee ,potato and sugar .

Keep stirring  this ,till this turns in to golden brown heat or aroma comes 
stir this, till it leaves ghee or starting leaving the pan .There should be no lumps.
serve in to the bowl and garnish it with all the ingredients under the granshing section.

Note -  see the color of halwa and mashed potato both have so much of differences and you have to fry it until you get this golden brown color.

Mango Roohafza Ice cream shake

This Mango Rooh afza ice cream shake is mostly for kids .They like  and love it. my niece like raisins  a lot and ready to take everything that have raisins , so i prepare the shake like this way and  Rooh afza  which give it freshness ,taste and colour.



Ingredients
For 2 People

  • 1 Mango
  • 2 tsp Roohafza
  • 2 scope icecream(any one u like ,vannila flav,Mango flav etc)
  • 10 Raisins
  • 1 and 1/2 cup  milk
  • few ice cubes
Method

Peal and cut the mango in to cubes.

Add milk, few ice cubes  and blend it in to the mixer or blender.
Take 1 scope of icecream and place on the top of the shake and sprinkle the Roohafza,  Raisins on the shake.
Now enjoy mango roohafza shke  with icecream and raisins !!

Kiwi & Banana shake

Kiwi fruits are rich in many Vitamins, flavonoids and minerals. In particular, they contain a high amount of Vitamin C (more than oranges), as much potassium as bananas and a good amount of beta-carotene. But my husband do not like to eat kiwi so i always mix it with Banana.


Ingredients
For 2 people

  • 1 kiwi
  • 1Banana
  • 1 Cup Milk
  • 2 Tsp Honey
  • 1 Tsp Sugar
  • 4 ice cubes
For Granshing
  • 2 slice of kiwi
  • 2 slice of Banana
  • 1 tsp Honey



Method:

Peal and cut the kiwi and banana .

Add 1 cup of milk ,honey , sugar, 2 ice cubes and blend it untill it get smooth.
Pour in to the glasses .Dressing with the kiwi ,banana, ice cubes and drop the honey on the top.
enjoy with drink!!

Strawberry Peach Smoothie

This is creamy  delight and Antioxident mix version of berry and peach .i have so many berry and peach i try it and taste was good .it is good for health and will  give relief from summer.



Ingredients
For 2  Glass
  • 5 Big Fresh  Strawberry( sliced)
  • 2 Peach Fresh
  • Fresh yogert or strawbrery ice cream
  • 2 tsp honey or 1 tsp sugar
  • 2-3 ice cubes

Method :
Place all the ingredients in the blender except ice  and  blend it for 30 seconds.
Now add ice Cover and process until smooth.
Pour in to the glass .Granish with strawberry .



Note-  i used strawberry ice cream you can use what ever you like yogert or icecream.

veggie vermicelli

This recipes is very easy and i learnet it from my mom. you can try it when you do not want to eat chapati .This is full of veggie and a good source of vitamins and healthy recipes specally for kids..



Ingredients:
  • 1 cup vermicelli (jave)
  • 1 small onion (Finely chopped)
  • 1 Tomato
  • 1Tbs Capsicum(cut julienne)
  • 1 Tbs Cabbage(optional)
  • 2 Baby carrot (Finely chopped)
  • 2/3 Cup Peas (158 ml)
  • 2 nos Green Chili(Finely Chopped)
  • 1 tsp Carom seeds\Ajwain
  • 1 tsp Grama masala
  • 1 tsp Turmeric Powder
  • 1/2 tsp red chili powder
  • 1 tsp salt
  • 2 cup water
  • 1 Tbsp oil (any vegetable oil )
  •  

Method:
Take the vermicelli in a pan  on medium heat ,and roast  vermicelli untill it trun  in to golden brown colour and keep aside.



Now pour the oil in the pan on medium heat . Add carom seed(Ajwain) saute it  trun in to   brown .
Add onion,Cabbage,capsicum,carrot  and fry it for 2 minutes .Add tomato ,Peas in this mixer and fry all the veggie utill they looked little tender.


Now add 2 cup water and wait untill it get boiled .
when bubled strat in the water add roasted vermicelli and cover the pan .
After every 2 minutes keep stirring . vermicelli will take exactly 5 minutes to get cooked .
After 5 minutes switch off the heat and cook it on steam for 2-3 minutes  .
Now serve it with Green chutney ,pickle or hot tea.

Bread Matra(yellow chekpeas) Sandwich





Ingredients:

  • 1 cup Matra(yellow check peas)
  • 4 Bread slice
  • 1 Potato (Boiled) optional
  • 1onion(Finally chopped)
  • 1 Large Tomato(finally chopped)
  • 4 Green chili
  • 1Tbsp Lemon
  • 1 tsp Salt
  • 1/2 tsp Red chili powder
  • 1/2 Grama masala
  • 1 tsp chat masala
  • 2 tsp cilantro leaves
  • 1Tbsp Tamarind chutney
  • 1tsp Green chili sauce(optional)



Method:

Soak the yellow check peas overnight in water .
check the image how yellow check peas or matra  looks.


In the morning add 2 cup of water ,salt and matra in the pressure cooker and boil it on medium heat for 20-25 minutes or until it get soft.

                  

Now mix, tomato,potato ( cut in to small pieces) , onion,greenchili,lemon juice,cilantro ,garam masal,chat masala,salt in the boiled  matra and mix it softely.






Now toast the bread and fill the matra and apply tamarind chutney and chili sauce on the top of matra.
and serve with tomato sauce and with hot tea.


Note: if you want to eat it without  bread then you can eat it separately like chat .

Veggie Chatpati Lentils (Breakfast )


This is very easy and simple snacks for  breakfast or we can make it any time in the morning tea or  with evening tea. Full of protein and good source of fiber also.



Ingredients:

  • 1cup MoongDaal(Split Geen Gram)
  • 1 Tomato (Finally chopped) 
  • 1 Tbsp capsicum (chopped)
  • 1 Onion(finally chopped)
  • 3 Green Chili (Finally chopped)
  • 1/2 Chaat masala
  • 1/4 Turmeric Powder
  • 1Tbsp Lemon juice
  • 1/4tsp Grama masala
  • 1/2 black pepper
  • 1/4tsp Red chili powder
  • Salt( according to taste)
  • Cilantro leaves(for dressing)
Method:
  1. Pour 1 cup of water in the pressure cooker when it come to boil ,add washed  moog dal,salt,turmric powder 
  2. On medium heat close the lid for 5 min or wait utill 1 whistels.  
  3. Turn off the heat from beneath the cooker. Allow the cooker to sit undisturbed for eight  minutes, letting the pressure drop naturally. The lentils will continue to cook as the pressure drops from the cooker.
  4. After 8 minutes unlock the lid. Check the tenderness of the lentils and add all the ingredients in it
  5. serve with hot  tea.

Note: I did not add onion because we  avoid onions on tuesday.

Khoya Til Laddo (Fatsing)

we can eat these ladoo in fast also, Sawan month  is going on and in this month we worship of God  shiva and have fast so i thought to make it .



Ingredients:

 1cup  Khoya\Mawa ( Dried whole milk)
 2TbspSesame Seeds (til  Coarsely powdered roasted )
 2Tbsp Powdered sugar
2tsp Almond powder(optional)
1 Tbsp shredded coconut
10-15 no of Raisins(For Garnishing)


Method:

  1. Roast the khoya on low flame till it is very light golden yellow color.
  2. Let is cool for few minutes.
  3. Then add coarsely powdered roasted sesame seeds and mix it.
  4. Add powdered sugar and almond powder and coconut .
  5. Mix well and shape into small balls.
  6. Decorate it with on the top from raisins.
For Khoya/Mawa:
  1. Method for Making Khoya in Microwave:
  2. Take three cups of full cream milk powder in microwave oven proof dish
  3. Add sufficient water to make a thick paste.
  4. Add 2 tablespoon of ghee.
  5. Cover with plastic cling film and microwave for 3 minutes with in between stirring. (Time depends on power of Microwave oven.)

Note:- If the mixture is too hot then the sugar will melt so care has to be taken that mixture should not be hot.
  • For almond powder take 20 -30 almond and grind it in to the mixi.
  • For making the khoya wihout micowave chek here
  • I used home made khoya from whole milk .

Til Chikki


Seasame seed hight in protein every 100 mg sesame seed(til) have 22.3gm protien and 559 calories
This recipes is full of protien and calories.. so enjoy !!



Ingredients
  • 1/2 Cup Sesame Seeds (til)
  • 1/3 Sugar or Jaggery
  • 1 tsp Ghee or Butter(unsalted)
  • 2tsp penuts (roughly crushed)
  • 1/2 tsp Ghee ( for greasing  the tray)
Method:
1.Til,2.sugar,3.Ghee,4.Penuts
  1. Roast the sesame seeds till they are light golden in color. Cool and keep aside.
  2. In the meantime, grease the back of flat tray with a little ghee and keep it aside.
  3. Heat the ghee in a pan and add the suger to it.
  4. Simmer over a slow flame till it caramelises and forms a hard ball when you add a drop in cold water.
  5. Add the roasted til and mix it thoroughly with the melted sugar. You may need to put out the flame during this process.
  6. When the mixture is ready, pour the entire mixture over the greased thali . Roll it out into thin sheets using a greased rolling pin or you can use bowl but bowl should be plan from bottom. 
  7. After 5 minutes moov the knife in it in to squrae shape.
  8. Store in an air-tight container.
In Microwave

  1.   you can roast the sesame seed in to the micorowave.Put the sesame seed in microwave prof bowl .
  2. On the microwave for 2 minutes and give the stir for 1 minutes and fold the sesame seed and again microwave it again for 3 minutes or util it trun light brown
  3.   if you are using jaggery then melt it in to the microwave. In a bowl add 1tsp ghee ,jaggery and reapet same process as we did  for seasame seed .but  for jaggery it will take 5-6 minutes  or u can microwave it utill it get melted.
